The aim of the team in Wild in the city cafe is not to propose just another type of ‘diet’, at least they do not have in mind today’s meaning of keeping a diet, they refer to the archaic understanding of this word (because ‘diet’ in ancient Greek actually refers to one’s way of living).
Neither do they intend to support the idea of the so-called ‘superfoods’. The aim is to offer real food. They want to provide their own variant of nutrition, especially when being on the road. But for those who are at home as well.
What they do is neither special, nor difficult; they just use only natural ingredients, leaving cereals completely aside.
They cook with oils / fats which do not ‘burn’ (that is highly saturated fats). Maybe this is the way to turn everything you eat into ‘superfood’, since nature must have had its reasons to offer these ingredients as such. Truth be told, we were quite surprised to discover it.
The idea was simple: το use natural ingredients reach in nutritional content in order to make our doughs. Almond and flax seeds powders are turned into dough using coconut flour and free-range eggs. The result – a dough rich in protein, nutritious fatty acids, fiber, vitamins and minerals.
They have chosen to use only coconut oil, due to its “non-burning” properties, in order to ensure the retention of nutrients as well as the healthiest possible preparation of our recipes.
